The Ultimate Cheese Toastie
The ultimate cheese toastie for a quick and easy lunch. Make these for your family and friends or just indulge yourself - they are delicious!
- Arran Creamery Black Waxed Extra Mature
- 1 or 2 Beef Tomatoes
- Bread of your choice (make sure it is thick - we suggest a good white bloomer loaf)
- Pinch of Salt
- Pinch of Cayenne Pepper
Thinly slice the tomatoes and lay them on a paper towel. Sprinkle a pinch of salt on them and leave to sit for 15 minutes to take out the moisture.
Grate the Arran Creamery Extra Mature Cheese (fun fact: this cheese won Gold and Super Gold at the World Cheese Awards, 2013). Make sure you grate a good amount and remember it reduces when it melts.
Heat up a frying pan on your hob. Take your bread and butter both slices on both sides. On one side, pack on half of your grated cheese, place your sliced tomato on top and then top with the rest of the cheese. Place the other slice of bread on top.
Place the bread in your pre-heated frying pan (make sure it's on a medium heat so that the cheese melts evenly without putting too much colour on the bread first!).
Top tip: For extra crunch, place a weight on top of the toastie whilst it is in the frying pan.
Once the toastie is golden brown on one side, take a fish slice and flip the toastie onto the other side - cook for another 3-4 minutes until the cheese is oozing out of the sides.
When the toastie is golden brown on each side and cheese has fully melted, take the toastie out of the pan.
If you have some extra cheese, sprinkle this onto the frying pan and let it melt. Sprinkle your cayenne pepper on top. Place the toastie back into the pan and let the cheese form a nice topping for your toastie.
Take out the pan, garnish with some fresh basil and a condiment of your choice and enjoy!
