Passion Fruit Meringue

Using the Handmade Meringue Company's incredible meringues, we have combined them with some passion fruit cream for a quick and easy dessert.

  • Handmade Meringue Company Meringue Nests
  • Double Cream 
  • 3 Egg Yolks 
  • 1 Vanilla Pod (Split)
  • 3 Passion Fruits
  • Golden Caster Sugar (60g)
  • Mascarpone (60g)
For Garnish 
  • Fresh berries
  • Icing sugar
  • Mint leaves 

Scrape the vanilla seeds into a pan with the cream. Add vanilla pod. Bring milk to the brink of boiling point and leave to infuse for 30 minutes. 

Mix together the egg yolks and sugar with a wooden spoon. Remove pod and slowly stir the milk into egg mixture. Rinse pan, then pour milk and egg mix back in. Stir to thicken, until it just coats the back of a wooden spoon. Transfer to a bowl. Leave to cool.

Scoop passion fruit pulp into a food processor and whiz to release the seeds. Tip into a sieve and push juice through into a bowl.

Fold custard mixture into the mascarpone with the passion fruit juice. Pour into an airtight container and put into the freezer until half frozen. 

Once you are happy with the consistency of the mixture from the freezer, get Handmade Meringue Company's meringue nests and place a dollop of passion fruit ice cream into the meringue nest. 

Top with fresh berries of your choice (we recommend strawberries, black berries and red currents). 

To finish, dust with icing sugar and enjoy!
