Smoked Salmon Bagel with Poached Egg

A delicious smoked salmon and poached egg recipe to set you up for the day.

  • Amhuinnsuidhe Castle Original Smoked Salmon
  • 1 Bagel
  • 1 Large Egg
  • Rocket 
  • Dill (for Garnish)

Begin with poaching your egg. To do this, put a small pan on your hob and fill with boiling water. Bring the water to the boil and add a pinch of salt. 

Turn the water down to a medium simmer. Take a spoon and stir the water to create a vortex. At this stage, crack open your egg and place in the middle of the vortex.

Let the spinning water do its magic and poach the egg for around 4 minutes (for a runny yolk). 

Toast your bagel whilst the egg is poaching. 

Once the bagel has been toasted, spread with butter (not essential) and layer on some rocket and strips of smoked salmon. 

Take the poached egg out of the water with a slotted spoon so the water residue drips away. 

Place the egg on top of the layer smoked salmon. 

Garnish with dill and enjoy!
