These blueberry pancakes are not just perfect for Pancake Day, they can be enjoyed any time of the year. The deliciously sweet blueberries mixed with some sticky maple syrup make a great indulging start to your day.
- 3 large eggs
- 115g plain flour
- 1 heaped teaspoon of baking powder
- 150ml milk
- 1 pinch of salt
- Handful of blueberries and more for serving
- Golden or Maple Syrup (optional)
Mix all of the dry ingredients into a bowl (flour, salt and baking powder). In a separate bowl, whisk your eggs and then add your milk. Mix the wet ingredients into the dry ingredients to form a thick batter. Leave to set for 30 minutes if you have time - overnight is even better!
Add in some of your blueberries to the batter.
In a frying pan, melt some butter and place a good serving of your pancake batter into the pan.
Fry on both sides until golden brown.
Serve a big stack of them with a good slathering of golden or maple syrup and a handful of blueberries. Enjoy!
