Applewood smoked pheasant burgers

The amazing produce from The Smoked Game Company makes for an extraordinary burger recipe done on your BBQ. Perfect for a summer garden party!

  • Smoked Game Company Pheasant Breasts
  • 1 red onion, finely chopped
  • 1 egg yolk 
  • A little Olive Oil
  • Dash of Soy Sauce
For Garnish  
  • Crisp salad leaves
  • Sliced tomato 
  • Sliced red onion 
  • Condiment of your choice

Mince the Pheasant Breasts, mix together with the onion and dash of soy sauce. Add the egg at the end of this process. 

Season with salt and pepper (to taste). 

Using floured hands, divide the mixture into 4 equal sized balls. Press into burger shapes, wrap in cling film and chill in the fridge until they are firm. 

Place onto the BBQ and brush lightly with olive oil as it cooks. 

BBQ for around 10 minutes and turn burgers 2 or 3 times (the secret of a good burger is not flipping it too many times!) 

Serve on a warm roll with freshly sliced tomato, sliced red onion and crisp salad leaves. Add a condiment of your choice and enjoy!

French white – an unoaked Sauvignon Blanc from the Loire Valley (such as Quincy) or if serving with chicken or pork, French red – a young red Bourgogne Pinot Noir.
